Joshua Grindstaff brings over 16 years of hands-on experience to the kitchen, shaped by a lifetime of family meals, big gardens, and dinner tables in rural Kentucky. Raised among generations of home cooks, food has always been more than just nourishment—it’s been a way of gathering, sharing, and storytelling. That foundation sparked a lifelong journey through kitchens across the country and even at sea, where Josh learned under chefs from all walks of life.
Though technically a culinary school dropout, Joshua proudly credits his education to the kitchens he’s worked in and the people he’s worked alongside. His approach to food is thoughtful and evolving—he views the restaurant as a living, breathing organism where service, learning, and creativity are constantly at play. Every dish on the menu represents a culmination of process, experimentation, and collective experience.
Currently, Joshua’s favorite dish is the carrots—a deceptively simple plate that took a great deal of intention and tweaking to perfect. It’s a great example of his philosophy: elevated comfort rooted in care and complexity.
Josh joined the team in March 2025 and quickly found inspiration in the diverse perspectives of his colleagues. “We all bring something different to the table,” he says. That spirit of collaboration is central to what he loves most about restaurant life—the bonds formed between staff, the shared energy of a busy service, and the ability to grow together.
When he’s off the clock, he is often finds inspiration in a cookbook or by enjoying food with his wife—his biggest culinary confidante. His go-to comfort food? Tiki drinks, spam anything, or late-night fridge bologna in pajamas. Because even chefs have their guilty pleasures.
Joshua invites every guest to slow down, notice the little things, and appreciate the thoughtful imperfections that make each dining experience personal, memorable, and just a little magical.
